INGREDIENTS
- 4 overripe bananas, mashed
- 125 g butter, at room temperature
- 6 Ajwa dates, finely chopped
- 2 eggs
- 1 3/4 cups (250g) flour
- 1 cup (150g) brown sugar
- 1 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1 1/2 tsp baking powder
- 2 tbs honey
METHOD
Step 1: Preheat the oven to 170C. Grease a loaf pan and line the base and sides with baking paper.
Step 2: Beat the butter and sugar with an electric mixer until creamy. Add the eggs one at a time, keep beating between additions. Add the banana and beat until smooth and combined. Stir in the sifted flour, baking powder and vanilla extract.
Step 3: Pour the mixture into the loaf pan. Spread the dates on it. Cover with aluminium foil and bake for 1 hour and 10 minutes and let it rest for 5 minutes before transferring to a wire rack to cool. Drizzle the bread with honey while it is warm.
