INGREDIENTS
- 350 g Ajwa dates, pitted and chopped
- 1 and a 1/2 cup (200ml) water
- 2 tbsp (25ml) of lemon juice
- 2 tbsp of brown sugar
- 1/2 tsp of baking soda
- 1 cup (150g) of oats
- 1 cup (150g) of all-purpose flour
- 3/4 cup (100g) brown sugar
- 1/4 tsp of baking powder
- 175g of semi-salted butter
We always recommend establishing which materials and equipment you will require to make this recipe prior to starting.
METHOD
Step 1: With the rack in the middle position, preheat the oven to 350°F (180°C). Line a square baking dish (20cm) with baking paper, letting it hang over slightly on both sides. Butter the other two sides.
Step 2: Bring the chopped dates, water, lemon juice, and brown sugar to a boil. Add the baking soda and simmer for 5 minutes, stirring constantly with a wooden spoon, or until the dates have melted. Then let it cool for a while.
Step 3: In a bowl, combine the oats, flour, brown sugar, and baking powder. Add the butter and stir to combine.
Step 4: Spread half the crisp in the baking dish and press firmly. Layer with the date mixture. Cover with the remaining crisp and press lightly. Bake for 55 minutes or until the crisp is golden brown. Let cool on a wire rack for 4 hours. Cut into 10 to 12 squares.
TIPS
Serve as a dessert by preheat the oven to 350°F (180°C) then place in oven for 2 minutes. Then place each square on your favourite dessert plate and add a scoop of vanilla ice cream.
